I often use mine for strawberry short cake or make layers of it with cool whip and fruit in a bowl, called a trifle. I also use it for strawberry jello cake for dessert. It is good topped with fruit and juice with a dollop of whipped cream.
My mom and dad used to stop when we traveled to see my grand parents, at an Amish bakery where they sold Sponge cakes they loved. They had all kinds of flavors but they loved their maple flavored ones and always got one to bring to my grandparents and often brought one home for me too. They were very good and appreciated.
This is my day to make a new menu and do my shopping for the week ahead.
Monday - Chopped Chicken and Sweet Potato Salad
Wednesday - Chicken Enchilada Skillet Casserole
Friday - Beer Battered Fish with Tomato and Avocado Salsa
Weekend - Herb Roast Turkey Breast
On the menu for today is:
Texan Ranch Chicken Casserole
Makes 8 servings
1 finely chopped onion
2 celery ribs, finely chopped
1 green pepper, finely chopped
1 red sweet pepper, finely chopped
1 Tbsp. oil
1 garlic clove, minced
3 cups cooked chicken breasts
1 can condensed cream of celery soup, undiluted
1 can condensed cream of chicken soup, undiluted
1 can, 10 oz., diced tomatoes undrained
1 Tbsp chili powder
12 corn tortillas, cut into 1 inch strips
2 cups shredded cheddar cheese, divided
In large skillet coated with cooking spray, cook and stir onion, celery and peppers in oil until crisp tender. Stir in the chicken, soups, tomatoes and chili powder.
Line the bottom of a baking dish with half the tortilla strips and half the chicken mixture and one cup of cheese. Repeat layers. Bake uncovered at 350 degrees for 35 minutes or until bubbly.
Serve with crunchy tortilla chips and top with sour cream and lettuce, if desired.
I only had sweet yellow bell pepper so that is what I used. I’ll be having some sponge cake for dessert!
It is a couldy day in the 80’s with a slight chance of rain. I hope to get out and back without getting wet.

I have never made a sponge cake. Those are cute in the shape of a Bundt. Did you make them?
I don't know that I've ever had a sponge cake! This mini (shown) sure makes an attractive dish, doesn't it? Somewhere along the way, I acquired two glass trifle bowls -- yet I only made one once, using lady fingers, cool whip and berries. It honestly looked homely, so I'm not in any hurry to try again -- perhaps for a banana pudding.
Sponge cake is so simple, but haven't made one in 2 decades. I will do this on the wkend.
We do like sponge cake. It is always good to stop by your blog for a good read and recipe. Most of all it is good to feel like we have visited a friend.
