The summer solstice occurs when the Earth’s axil tilt is closest to the sun. The summer solstice is a significant time for many religions and cultures. Traditionally, people all over the world will mark this important milestone in the year with festivals, gatherings and rituals.
To celebrate today, grab you sunglasses and head outside to enjoy the extra hours of daylight. It is also the perfect time to plan a summer gathering for family and friends.

I’m enjoying the extra hours of daylight and am celebrating today. I’ll be going shopping and for the first time, may have to turn on the a/c in the car.
I have made up a new menu for next week to do my shopping from,
On the menu for next week is:
Monday- Chopped Chicken and Sweet Potato Salad
Wednesday-Lemon Chicken Pasta
Friday - Salmon Rice Bowl
Weekend - Skillet Steak with Mushroom Sauce
On the menu for today is:
Turkey BLT Wraps
Makes 1 serving
1 8 inch tortilla, room temperature
1 Tbsp mayonaise
1 piece green leaf lettuce
2 oz, low salt deli turkey
4 slices tomato
1 strip cooked bacon
Spread tortilla with mayonnaise. I have corn tortillas on hand. Top with lettuce, turkey, tomato and bacon, Roll closed and cut in half.
I will be making 2 so I have one leftover for tomorrow, I’ll simply wrap it up and put it in the fridge.
This a cool and light dinner for tonight. I’ll probably have a few lightly salted chips with mine.
Summer is here and I’m trying to enjoy it with lighter dinners.

Enjoy the longer daylight in the summer while we have it.
We've been experiencing so much rain of late, I don't know if the sun will shine -- but I'm glad you're having an opportunity to get out and enjoy. Isn't it curious how different we all are? You love the Summer and I'm counting down days to Winter. My mother always said, 'This would sure be a boring world if we all liked the same things.'
Your turkey wraps sound delish. That's smart, making two so you've another at the ready tomorrow.
