Today is also World Environment Day which is a day that stimulates awareness of the environment and enhances political attention and public action. June 5th, was the day that the United Nations Conference on the Human Environment began in 1972. It was established by the UN General Assembly in 1972.
The first World Environment day was in 1973. This holiday is hosted by a different city with a different theme and is commemorated with an international exposition in the week of June 5th. The topic for 207 was Melting Ice while the topic for 2010 was Many Species, One Planet, One Future.
The day is similar to Earth Day which is celebrated April 22nd.
To celebrate today, enjoy your environment and do what you can to improve it.
If you cannot see the bright side, polish the dull side

This grandson would be in his teens today, but he passed away at the age of two. He died of SID;s, Sudden Infant Death. He was truly loved and is dearly missed. I pray today for all those who have lost children, especially DS#3 and his wife who were his parents.
I believe that no matter where we go, we should leave it better than we found it. We clean up our trash and also what others may have left behind.
Our environment can be inside or outside our homes. What we do effects others around us. I like to make my home a comfortable and welcoming place for others to come to. I also like to make the outside of my home an appealing place to visit. I keep my grass cut and plant flowers all around. I’m thankful for all the help I get in order to do this.
We all need to work together for the betterment of others. I’ve found what you do for others, comes back to you.
It’s Monday and my day to cook up something new for dinner and on the menu today is:
Sheet Pan Eggs with Spinach and Ham
Makes 12 servings
18 eggs
1/4 cup milk
1 tsp. paprika
1 tsp. ground pepper
1 tsp onion powder
1 10 oz. package frozen chopped spinach, thawed and squeezed dry
1 cup shredded Cheddar cheese
1/2 cup diced ham
Preheat oven to 300 degrees. Generously coat a rimmed baking dish with cooking spray.
Whisk eggs, milk, paprika, pepper and onion powder together in a bowl. Pour into prepared baking dish and sprinkle with spinach, Cheddar and ham. Bake until just set, about 25 minutes. Rotate the dish back to front halfway through baking to ensure even cooking. Cut into squares and serve.
I will only make half this recipe as it serves 12 and that is way too much for just me, but it would be fine for a family or when you have company.
It’s to be in the mid 70’s today and sunny, but still cool enough to turn the oven on. I use my toaster oven so it doesn’t heat up the kitchen anyway.

It is amazing that just yesterday we were discussing SIDS. Back before it has a name in the early 40s I lost a little brother. and yes the families have a tough time getting over that tragedy. Thinking of the Little Pumpkin today.

I thought only babies could get SIDS. He was older than I thought possible. I am so sorry - I know it is hard to lose someone - especially a little one. He was so cute.
I totally agree with you - no matter what - we should always leave things a little better than when we got there!
