Today is Flag Dy when we reflect on the history of our flag, what it represents today and what we’d like it to be tomorrow.
On this day in 1777 the Second Contental Congress passed the Flag Resolution, which designated the first American flag. There have been twenty seven different American flags over the course of our nation’s history. The one we use today, which features fifty stars, became our national emblem in 1960.
President Woodrow Wilson designated Flag Day as an official holiday in 1916 However, the idea dates back to 1885 when school teacher Bernard J. Cigrands held the first known Flag Day.
To celebrate today, decorate your home with an American flag and start brainstorming how you’ll celebrate the 4th of July this year.

I proudly fly my flag all summer until after Veterans Day in the fall. Then I put it away due to the inclement weather we have in the winter. I am not allowed to drill new holes to put up a flag pole, so I fly little flags in my flower boxes and some put in the ground in front of the house.
I’m proud to be called an American and to live in a country that believes in freedom for all. Our community has a large flag pole out in front as you enter here. I hope you’ll join me today and fly your flag.
It’s my usual day to grocery shop, but not knowing when I’d get my car back, I decided to put that off until Friday. Thankfully, they called to say my car was fixed and I got it back yesterday afternoon. Today I can go to lunch with my high school grad friends. We are going to go to a place out by the lake, and get a good view of the Vermilion River. They have lots of expensive vacation homes there to see and I also hope to make a trip to the beach nearby. I need some new beach pictures.
I am still made up a new menu for next week and on the menu is:
Monday - Chicken Ceasar Pasta Salad
Wednesday - Turkey BLT Wraps
Friday - 10 Minute Tuna Melt
Weekend - Summer Chicken Parmesan
On the menu for today is:
Stuffed Sweet Potatoes with Chiii
Makes 4 servings
2 sweet potatoes
1 Tbsp. vegetable oil
8 oz. lean ground beef
2 scallions sliced, green and white parts separated
2 Tbsp. tomato paste
1 can chipotle peppers in adobo, chopped
1 Tbsp paprika
1 cup canned kidney beans, rinsed
1/2 cup water
1/4 cup shredded Mexican blend cheese
4 tsp. sour cream for garnish
Preheat oven to 425 degrees . Line a baking sheet with foil. Prick sweet potatoes in several places with fork and place on the prepared pan Bake until tender, about 45 minutes. Let cool slightly.
Meanwhile heat oil in a skillet over medium high heat. Add ground beef and scallion whites. Cook stirring and breaking up the beef with a wooden spoon until no longer pink. Add tomato paste, chipotles, if using, and paprika. Cook until the tomato paste beings to brown. Add beans and water; cook stirring until most of liquid has evaporated. Cover and keep warm.
Slice the sweet potatoes in half lengthwise. Leaving skins intact. Carefully scoop the flesh into a medium bowl. Add one cup of the chili mixture and stir to combine. Fill each potato skin with this mixture. Return to the baking sheet and top with remaining chili mixture and cheese.
Bake until cheese is melted and potatoes are heated through. Top with scallion greens and garnish with sour cream if desired.
As usual I’ll be skipping the peppers and add in some cumin instead, but otherwise I’ll follow the recipe.
It’s to be a cool day here but sunny with a high of 70 degrees.

I'm hoping my son will get an opportunity to visit one of these days -- and rehang our flag! The last one snapped off during a March windstorm, and I refuse to let Tom get on a ladder to make things right again.
