Today is National Chocolate Chip Day which celebrates chocolate chips which are an essential ingredient in dozes of delicious baked goods - chocolate chip cookies, pancakes, muffins, brownies, bagels and many more. You can even find chili recipes that call for these sweet morsels.
In the 1930’s, Ruth Graves Wakefield created the original chocolate chip cookie at her Toll House In in Whitman, Massachusetts. Ruth intended to make chocolate cookies for her guests, but she ran out of bakers chocolate. She substituted some semi sweet chocolate morsels and discover that the pieces did not melt into the dough as expected. Her cookies were an instant hit. Today 25 per cent of all cookies baked in the United States are chocolate chip!
To celebrate today, bake something yummy with chocolate chips to enjoy!

Thankfully, I did find some sugar free chocolate chips to use. They taste just as good as the regular ones. I cannot tell the difference. I do use them often when baking, I put them in and on top of lot of the foods I make. I even enjoy them on iced cream.
On the menu for today is:
10 Minute Tuna Melt
Makes 2 servings
1 4 oz. can
1 celery stalk, chopped
2 Tbsp chopped red pepper, roasted
1 scallion minced
3 Tbsp plain Greek Yogurt
1 tsp Dijon Mustard
1/4 tsp ground paprika
2 tsp. mayonnaise or buter
Stir the tuna, celery, roast red pepper, scallion, yogurt, mustard together until well blended
Spread 1 tsp mayonaise or butter on one side of each slice of bread. Flip 2 of the slices and top each half with the tuna mixture, 1 slice of cheese and another slice of bread, mayonaise side up.
Heat a skillet over medium heat. Place the sandwiches in the pan and cook, turing once, until cheese is melted and the bread is golden. Serve immediately.
I am using mayo instead of yogurt today. You could also substitute with parmesan Ceasars dressing. I also like to use butter on the outside not mayo. It will still be a very good and a good sandwich makes a great dinner..
It’s to be a quieter day here. I only have to submit my grocery order for pick up tomorrow and my grandson will be over to mow the grass later on. All I have to do is supervise his work. They’ll be leaving on vacation tomorrow and he wanted to get it done before they left. I’ll get to see my daughter too as she’ll bring him over. It will be so nice to see her before she leaves and wish her a Happy Birthday which is the 18th.

I love it when someone makes a mistake and turns it into something good! Chocolate chip cookies are good!!
In our home I am the only 'Not Choc chip' guy, everyone else has lost their minds. LOL. I do know that choc chips are the top choice for most folk.
I am feeling poorly lately, but did enjoy the visit. somehow your summer count down is WRONG on my blog. It is hot here and the report shows 69 days until summer!!

I'm not especially fond of chocolate, but used to substitute carob chips when a recipe called for chocolate chips. (I couldn't tell the difference!)
Tom and I don't usually gift one another, but now I'm thinking a bag of chocolate chip cookies would be a fun way to wish him Happy Father's Day from our pups. Thanks for the idea!
