Today is National Egg Day which are a terrific source of protein and Vitamin D, that makes them one of the healthiest breakfast foods. There is more than a hundred ways to cook an egg. Some of the most popular varieties are scrambled, fried, poached, hard boiled, sunny side up, and over easy.
While the eggs most Americans consume are from chickens, a wide range of poultry like ducks and geese provide tasty gourmet egg varieties. Quail eggs, for example are considered a delicacy in many countries.
To celebrate today, cook up your favorite egg recipe for breakfast, lunch or even dinner!

Although some people don’t want to eat eggs because they have high colesteral, I don’t have to worry about that, so I eat eggs regularly. I made some egg salad for lunch today and would like to fix french toast soon. I found some sugar free syrup I’d like to try out.
Today is my day to cook something for the weekend and on the menu is:
Sheet Pan Orange Apricot Drumsticks
Makes 4 servings
1 lb. fingerling potatoes, halved lengthwise
1 pound green beans, trimmed
1 cup thinly sliced red onion
2 Tbsp. olive oil
1/2 tsp ground pepper, divided
4 skinless chicken drumsticks
1 orange
3 Tbsp. apricot preserves
1 Tbsp.soy sauce
3 garlic cloves, minced
Preheat oven to 425 degrees. Place potatoes, green beans and onion on a rimmed baking sheet
Drizzle with oil and sprinkle with 1/4 tsp. pepper. Nestle the chicken into the vegetables.
Grate 1/2 tsp zest form orange and squeeze it to get 2 Tbsp. juice. Combine the zest and juice, preserves, soy sauce, garlic and remaining 1/4 tsp pepper. Brush the chicken with half the glaze.
Roast the chicken and vegetables for 15 minutes. Stir the vegetables; turn the chicken and brush with remaining glaze.
Continue roasting until the chicken reads 165 degrees on a thermometer. About 20 minutes more.
This meal has everything I’ll need for dinner in one pan. I didn’t have fingerling potatoes so used regular ones and cut them in quarters.
We cooled off some so it’s not too hot to turn on the oven today. We are to be in the mid 70’s and can turn the A/C off, open up the windows and let some fresh air in!

The eggs look delish!
YUMMMMM! I enjoy eggs just about any way, but usually do soft-scrambled for simplicity sake. Have you ever put an over-easy atop a burger or slice of pizza? That's tasty, too.
Eggs, mmmm. Had a cousin whose family sold eggs. The mom made the best angel food cake.
