Today is Iced Tea Day which celebrates an iconic summer beverage and one of the most refreshing elixirs known to man. There is something magical about the combination of brewed tea, mint leaves and fresh lemon slices served over ice. Historians believe that people began serving cold tea sometime during the 19th century. The drink became popular when vendors started selling it at public events and the World’s Fair.
Today people make iced tea using a variety of different flavors.. You can also mix iced tea with other beverages. One of the most popular is Arnold Palmer, which consists of half iced tea and half lemonade.
Sweetened or unsweetened, flavored or unflavored, celebrate today with a nice tall glass of your favorite Iced Tea!

I love iced tea in the summer and like to mix mine with cranberry juice. Both are healthy for you. Tea contains healthy antioxidants that work to prevent stress which can damage healthy cells. Antioxidants in tea eliminate free radicals caused by pollution and other factors. Tea relaxes and refreshes us! The cranberry juice acts as a natural sweetener.
Saturday’s are my day to cook for the weekend and on the menu is:
Lemon Chicken Pasta
Makes 6 servings
4 boneless skinless chicken breast halves
1/4 tsp plus 1/8 tsp. pepper, divided
1/2 cup flour
8 oz. uncooked pasta, I used cauliflower pasta
3 Tbsp. olive oil, divided
1/4 cup peeled and thinly slice garlic cloves
1 cup white win or chicken broth
2 Tbsp. lemon juice
1/2 cup grated Parmesan cheese
1/3 cup plus minced fresh parsley, divided
Lemon wedges, optional
Pound chicken breast with a meat mallet to 1/4 inch thickness. Sprinkle with 1/4 tsp pepper. Place flour in a shallow bowl. Dip chicken in flour to coat both sides, shake of excess.
Cook pasta according to package instructions for al dente. Meanwhile in a large skillet heat 2 Tbsp. oil over medium heat. Add chicken and cook 3 minutes on each side until no longer pink. Remove and keep warm.
In the same pan heat remaining oil over medium heat, add garlic and cook until garlic is slightly browned. Add wine to pan and increase heat to medium high. Cook, stirring to loose brown bits from pan, until liquid is reduced by half. Stir in lemon juice.
Drain pasta, reserving 1/2 cup pasta water, place in a large bowl. add cheese, 1/3 cup parsley, half the garlic mixture and remming pepper; toss to combine, adding reserved pasta water to moisten pasta. Serve with chicken. Drizzle remaining garlic mixture, sprinkle with remaining parsley, if desired serve with lemon wedges.
We are once again in the 80’s again, so a touch of lemon will be appreciated. I’m thankful I discover cauliflower pasta so I can once again enjoy some pasta for dinner!

We've been asked to bring iced tea along to our friend's pool party this afternoon -- so I'm headed to the store for 3 big jugs of Milo's. (Not sure if they sell them in Ohio, but it's the best we've found.)
I still have to smile, remembering a former co-workers words about iced tea: "One does not buy a glass of tea, they only borrow it." (LOL)

Iced tea! Iced tea is popular in the MidWest also. Mom even made tea syrup (how, I don't know). But in summer, we always had a pitcher of tea around.
The lemon chicken sounds soooooooooooo good.
I love unsweet iced tea! Especially peach tea!
