Today is Juneteenth, the annual celebration of the end of slavery in the U.S. On this occasion we reflect on Black freedom in America, racial justice and equality and how far we still have to go.
Juneteenth was celebrated in Texas in 1865 and has since spread across the United States and the world. People often wonder why is celebrated today instead of when the preliminary Emancination Proclamation was issued by President Lincoln. It was on June 19th that the Union Army marched into Galveston, Texas and enforced emancipation. This celebration in Galveston is the largest celebration in the world.
To celebrate today, Host a meal for family and friends, participate online or a find a new way to advance racial equality.

I believe that we were all created equal no matter what color we are. We are all special in the eyes of God. We should treat people kindly no matter who they are or where they live. I was taught that no one was better than me and that I was no better than anyone else. We are to love one another!
It is Monday and my day to cook again and on the menu is:
Chicken Ceasar Pasta Salad
3 cups uncooked whole wheat spiral pasta
6 cups torn romaine
3 cups shredded rotisserie chicken
2 medium tomatoes, chopped
1/2 cup shredded Parmesan cheese
1/2 cup creamy Ceasar Salad dressing
1/2 cup slivered almonds
Cook pasta according to package instructions. Drain, rinse with cold water and drain again, Toss with remaining ingredients and serve immediately.
1 serving is about 2 cups.
I didn’t have rotisserie chicken so cooked some chicken breasts and shredded them. And instead of romaine I used some salad greens I had on hand. This should still make a very good salad for dinner.
Our weather has turned warm, in the 80’s here so this is the perfect meal for warm weather. I’m enjoying the sunshine and being warm, I never get too hot, and I don’t like being cold.
I didn’t have any pictures of slavery today so I’m showing some this day from 2017. Some of the summer fun being had by my family.

I didn't realize that about Galveston! It shouldn't be so hard to treat one another like they matter. We need to step up our game and just be kind.
