Today is Public Service Day which was declared by the United Nations in 2002. The purpose of this day is to recognize the public servants all over the world. Today is the perfect day to organize a volunteer project for this summer. Every little bit helps.
There are many causes worth fighting for in your local community, your state, your country, and the world. Whether you volunteer at a local food pantry or clean up a park, the opportunities are endless.
To celebrate today, remember every act of public service, no matter how small, can make a difference!

I volunteered for many years, but now that I’m older, I can no longer do so. I receive more help than I give these days. I gave my services mostly to our church and to our youth. I worked with the scout troop for many years and also volunteered with our youth group. Whatever, my children were involved in, I needed to help out.
Not many want to help out and so I had to do it to keep these organizations going on. Most people just want to drop their kids off and let others take care of them.
Yesterday I picked up my grocery order that someone else shopped for. I do appreciate their service to do what I’m finding more and more difficult to do. They do a very good job and always get my order right. They do get paid, but they serve with a smile. All I have to do is pick it up, which I am still capable of doing.
Today, I have an afernoon hair cut appointment. We are still in the 70’s, not too hot or too cold, but it will also be raining on and off. Thankfully the weekend is to be warmer and sunny!
On the menu today is :
Summer Skillet Vegetable and Egg Scramble
Makes 4 servings
12 oz. baby potatoes, thinly sliced or 2 regular size potatoes
4 cups thinly sliced vegetables, mushrooms, and bell peppers
and or zucchini.
3 scallions thinly sliced, white parts seperated
1 tsp fresh rosemary or thyme
6 eggs, lightly beaten
2 cups baby spinach
Heat oil in a cast iron skillet over medium heat. Add potatoes; cover and cook stirring several times until they begin to soften.
Add sliced vegetables and scallion whites, cook uncovered, stirring occasionally until vegetables are tender and lightly browned. Stir in herbs. Move the vegetables to the perimeter of the pan.
Reduce heat to medium low. Add eggs and scallion greens to the center of the pan. Cook, stirring until the eggs are softly scramble.
Stir spinach into the eggs. Remove from heat and stir to combine well.
I didn’t have baby potatoes so I used 2 regular potatoes sliced. This would also make a good breakfast dish.

You must be so proud of DS#6! Having retired 5 years ago, the only initiatives in which I participate these days are those through my church. I count on their wise counsel where need is the greatest.
Your egg and veggie dish sounds like something I'd love. I'd have to omit the potatoes, but
everything else sounds yummy.
Public Service Day - how nice to celebrate the helpers of the world - I am like you - I used to help all the time - now I need help and someone shops for my groceries too. Love your family.
