Today is Read Aloud Day which celebrates the importance of reading, writing, and sharing stories. Worldwide, people will partipate to raise awareness for literacy rights. Everyone should have access to the written word.
Over 1 million people in 100 countries will celebrate this day. Nearly 800 million people worldwide are still illiterate and this day aims to raise awareness and change that statistic.
Celebrate this day by reading aloud and letting people know how important it is to read.

I love reading and encourage others to do so. I’ve learned more from books than I ever did in the classroom. I cannot imagine not being able to read. Everywhere you go there is something we need to read.
These days I don’t read aloud so much but in the past, I’ve done a lot of that to my children and grandchildren. I remember reading books to them and helping them sound out the words they would see. Teaching them to read is part of reading aloud to them.
I read a lot of recipes and about healthy eating and right I’m reading about no sugar, no salt recipes. On the menu today is:
Cheesy Meatball Casserole
Meatballs:
1 lb. ground turkey or lean beef
1 egg
1/2 cup plain breadcrumbs
1 Tbsp. Italian seasoning
3 Tbsp. grated Parmesan cheese
1/2 tsp. garlic powder
fresh ground black pepper
Casserole:
1 jar no salt spaghetti sauce
1/2 cup shredded Parmesan
1 cup mozzarella cheese, shredded
In a large bowl, mix together meatball ingredients until combined evenly.
Roll 40 meat balls. Space evenly on baking sheet. Bake in a 425 degree oven for 25 minutes.
Pour half the spaghetti sauce in the bottom of a baking dish. Top with meatballs. Pour remaining sauce over meatballs, and top with shredded cheeses.
Cover with foil and bake in a 375 degree oven for 30 minutes. Remove foil and bake for an additional 5 minutes, until all cheese is melted.
I would usually make a meatball sandwich with these of serve over spaghetti, but for now I’m going to try out noodles made with spiraled zucchini. You could also serve them with spaghetti squash if you desire.
I’ve made up a new menu to use next week:
Monday - Chicken Egg Roll in a Bowl
Wednesday - Cauliflower Fried Rice
Friday - 10 Minute Tuna Melt
Weekend - Rosemary Chicken Tuscan Style
We won’t be going above freezing today but the sun is out and the roads are clear, so it will still be a good day to get out. I’ll just bundle up and keep warm.

After looking at the pictures in my post today, I think the best way I could celebrate this day, would be to straighten up and clean out my bookshelves. Sorry for the messy pictures of my books today.
Library Lovers month! I think one of the greatest gifts my parents gave me was introducing me to the public library. Sadly, I no longer have very many 'paper and ink' books. Maybe that's a good thing, because I've always longed for a big beautiful bookcase, the kind that takes up a whole wall. I do love your little glass-front cabinet; that's one of my favorite shades of green!

I remember reading to my kids out loud. I used to love it so much. Thanks for the memories. And they put small little February with all those things in it. lol
We have been AWOL for awhile, will try to do better. You hit a smile place, reading aloud to our children and grands is a special thing.
