Today is National Strawberry Day which celebrates one of the most popular fruits in the world. Strawberries are the first fruit to ripen every year, so they are often called the taste of Spring.
The bright red juicy berries are both delicious and incredibly good for you. Each bite is packed with vitamins, antioxidants, and fiber.
People have been enjoying them for their health benefits for centuries. In fact the Ancient Romans believed that strawberries could cure fevers, fainting, inflammation, and several other ailments. They also used them for teeth whitening.
To celebrate today, eat a bowl of strawberries and cream, a strawberry smoothie, a piece of toast smothered in strawberry jam, or a scoop of strawberry ice cream. Enjoy!

Thankfully, strawberries are one thing I can still eat and I do that often. I try to keep some on hand to snack on or some no sugar added jam to enjoy on a slice of my oatmeal bread.
When I visited Florida and we went to the citrus store, they had some delicious orange juice mixed with strawberry juice. It was delicious. We brought some home to enjoy and I think I drank most of it myself.
It’s Monday and my day to cook up something new. I still have meatloaf to enjoy in a sandwich for lunch but for dinner I’ll be fixing:
Slow Cooker Split Pea Soup
Makes 8 servings
1 pkg. dried green split peas rinsed
12 cups cubed fully cooked ham
1 onion, chopped
1 cup chopped carrots
3 garlic cloves, minced
1 tsp. dried rosemary, crushed
1 tsp. dried thyme
32 oz. reduced sodium chicken broth
2 cups water
In a slow cooker, combine all ingredients. Cover and cook on low 8 hours or until peas are tender.
You could also make this with a left over ham bone and remove the meat from it when serving.
It’s supposed to rain here and it will be in the upper 40’s so it will still be a chilly day here and it will be good to have some hot soup to enjoy!
I’d like to get out and go to the motor vehicles place because my doctor gave me a slip that will allow me to to get a wheel chair parking permit and I want to enjoy the closer parking spaces at the stores, but I think I’ll wait until a drier day to do that.

Strawberries are one of Tom's favorite things! I bought him a cheesecake w/ strawberry swirl for his birthday, and he usually keeps a carton of sliced, frozen strawberries to put over ice cream.
Wish I was there to help you eat that split pea soup! Unfortunately, 'someone' here won't touch it so even freezing portions to eat later, it probably wouldn't be of any benefit to make. Enjoy!

Oh yes we too love some juicy strawberries, they deserve their own day. Wish I had thought and got some at the store. ;-(

Not the biggest fan of strawberries, but I do like them dipped in chocolate! What woman don't like choc on everything! lol....I am a big blueberry eater. I love them. Here is hoping for a a bright day to you.
