Today is Galentine’s Day which celebrates your closest gal pals.
Before Valentine’s Day festivities begin tomorrow, today is a fabulous opportunity to spend some quality time with your girls. Whether it’s dinner out or a spa day, you could gather with your girlfriends to share the love.

Since the holiday’s inception in 2010, women across the U.S. have embraced Galentine’s Day.
To celebrate today, get together with your gal friends. Let them know how appreciated and loved they are.

Galfriends are definitely a big part of my life. They are always there for me. I don’t know what I’d do without them. My daughter is my very best friend and we do a lot together. She calls me every day just to check in.
Mondays are my day to cook up something new here and on the menu is:
Savory Beef and Cabbage Supper
makes 6 servings
1 lb lean ground beef
1 onion, chopped
2 garlic cloves, minced
1 small head of cabbage, chopped
5 medium carrots, peeled and diced
3 Tbsp olive oil, divided
1 tsp pepper
1/2 tsp caraway seeds
1/4 tsp ground allspice
1/8 tsp ground cloves
1/2 cup ketchup
2 tsp. cider vinegar
In a large pot cook beef with onion and garlic over medium high heat until no longer pink, crumble beef. Stir in cabbage, carrots, 2 Tbsp oil and seasonings, cook and stir until all vegetables are slightly softened.
Stir in ketchup, vinegar and remaining oil. Cook uncovered 5 minutes more, stirring occasionally
You could also make this with ground turkey if desired. You may also have to cook the vegetables a little longer to make sure they are tender.
We are starting off this week with some warmer temperature. It’ll be in the 50’s and sunny today . This is one of the mildest February’s I can remember.

Happy Galentines Day, Ma! I feel fortunate to have shared time this morning with those ladies in Bible study who I've come to love. And now, I'm doing the same here with those of you in Blogland. How fortunate are we?
Tom's taking me out for an early Valentine's dinner after my doctor's appointment, so I guess that counts as a celebration.

Galentine’s Day - I have never heard of that - but that is sweet. It would be my daughter too.
