Today is National Tortilla Chip Day which was invented by Rebecca Carranza in the 1950’s. Carranza and her husband owned El Zarape Tortilla Factory in Los Angeles and were amoung the first to mass produce tortillas. The machine often produced misshapen tortillas and Carranza decided to try to use them instead of throwing them away. She cut the rejected tortillas into triangles , fried them and sold them for a dime a bag.
Tortilla chips soon became a nationwide sensation, served along side salsa, chili, guacamole, and a variety of other appetizers. In 2003, the state of Texas made the tortilla chip the official state snack.
To celebrate today, buy a bag of your favorite tortilla chips or make your own and enjoy with your favorite dip.

Chips are one more of things I’ve had to give up, I have found low salt potato chips but not low salt tortilla chips. I did enjoy them very much when I used to eat them with guacamole dip.
Today is Friday and I have another new recipe to try out.
On the menu today is:
Slow Cooker Vegetable Minestrone Soup
Makes 8 servings
4 carrots, peeled and chopped
3 stalks celery, chopped
1 red onion, chopped
3 cloves garlic, minced
2 cups green beans, cut into 2 inch pieces
2, 15 oz., cans no sodium added red kidney beans, rinsed.
2, 15 oz, cans no sodium added diced tomatoes, undrained
6 cups no sodium added vegetable broth
2 Tbsp. Italian seasoning
1 tsp crushed red pepper
1/2 tsp ground pepper
1 zucchini, chopped
1 cup elbows or other small pasta
1/2 cup grated Parmesan cheese
Combine carrots, celery, onion, garlic, green beans , kidney beans, tomatoes, broth, Italian seasoning, crushed red pepper, and ground pepper in a slow cooker. Cover and cook 6 to 8 hours
Stir in zucchini and pasta. Cover and cook on low until the pasta is tender. Serve immediately topping each serving with about 1 1/2 Tbsp Parmesan
Serving size is 2 cups soup and 1 1/2 Tbsp. cheese
I made mine with ditalini pasta. It’s going to be a very cold day today in the 20’s so it will be good to enjoy hot soup.

I really need to try making my own salt free tortilla chips.
Tortilla chips are one of my top weaknesses! I could probably make a whole meal out of them.
Please let us know if you find a way to create salt-free ones.
Well I must say iot took years for the tortilla chips to reach our part of the South. BUT, but when they did they were/are a hit.
