Today is Umbrella Day which honors one of the world’s most useful inventions, the umbrella!
Not only does the umbrella keep us dry from the rain, but it also protects us from the heat of the day. You can also use and umbrella as a fashion accessory. While the umbrella is primarily practical, they also decorate cocktails. These brightly colored paper umbrellas make fun party favors, especially when visiting sunny locations.
To celebrate today, make sure you have an umbrella on hand, Spring rains are coming.

I have to say my favorite umbrella is a beach umbrella to protect myself from the sun when I’m out on the beach. The pictures today are of the umbrella tables around the swimming pool we share where I live.
I also keep a rain umbrella in my car, just in case it rains while I’m out. I keep one handy in the house too, for times I have to go outside in the rain. I’ve got one for my purse and took one along with me when I went on vacation. Thankfully, I never had to use it. It stayed packed away in my suitcase the whole time I was gone.
We’ve had some rain here this week as it was warmer, but they say it’ll be getting colder today. We are back in the 30’s but not below freezing.
I’ll be cooking up something new today and on the menu is:
Ten Minute Tuna Melt
Makes 2 servings
1.5 oz can no salt added water packed tuna, drained
1 celery stalk, chopped
2 Tbsp. chopped jarred roasted red pepper
1 scallion minced
3 Tbsp Greek yogurt
1 tsp. Dijon mustard
1/4 tsp ground pepper
4 Tsp. mayonnaise or softened butter
4 slices whole grain bread
2 slices sharp Cheddar cheese
Stir tuna, celery, red pepper, scallion, yogurt, mustard and pepper together in a bowl until well blended.
Spread 1 tsp. mayonaise of butter on one side of each slice of bread. Flip 2 of the slices and top each with half the tuna mixture, 1 slice cheese and another slice of bread, buttered side up.
Heat a skillet over medium heat. Place the sandwiches in the pan and cook, turning once, until the cheese is melted and golden brown. Serve immediately.
I used a chopped red pepper instead of using jarred roasted peppers and put butter on my bread. I love tuna and this sandwich is delicious.
I happened upon a low carb bread called Oatmeal bread and the sodium is low too. That’s what I’ll use today.
I tried to get all my projects finished yesterday, but didn’t succeed so today will be finish it up Friday for me!

I love tuna, but sadly it doesn't love me back.
Umbrellas have come a long way since I was a kid -- such cute designs exist and I like how compact they are. Yep, we keep a few on hand, "just in case."
I wonder who invented the umbrella. I have about five of them. It has rained and rained and rained this winter in Georgia - most I can remember!
