Today is National Irish Coffee Day which celebrates a delicious cocktail made with black coffee, sugar, Irish Whiskey and whipped cream.
Joe Sheridan, a bartender at Foynes Airbase in Ireland invented this delicious drink in 1942. A group of passengers stopped at his bar after a miserably cold eighteen hour journey across the Atlantic Ocean. Joe brewed hot coffee, added a splash of whiskey and offered the concoction to the travelers. According to legend one of the passengers asked him, Is this Brazilian coffee, and Joe laughed and told him, no, that’s Irish coffee.
Ten years later, Jack Koeppler, the owner of the Buena Vista bar in San Francisco and travel writer Stanton Delaplane teamed up to bring Joes famous Irish coffee to the States. They experimented for months before they got the taste just right and put it on the menu. The popularity of the drink soon spread nationwide and it’s been a favorite ever since.

I do love my coffee, but rarely ever have had Irish coffee, but it does sound good especially with the addition of whipped cream, so I might just have to try it out today. We are under a winter weather advisory with snow and icy sleet coming our way. The folks to the west of us will have more snow than we do. However much we get, it’s not supposed to be nice out. And I have a doctor appointment to go out today so I’m hoping the roads won’t be too bad. This is my check up with my kidney doctor and I should find out the results of the lab tests that were done last week. I’m hoping all will be good and that he gives me the ok to continue with what I’ve been doing. After he changed my blood pressure medication a year ago, my kidneys seem to improve.
It’s going to be cold and windy out so I’ll be bundling up and keeping warm when I go out.
On the menu for today is:
Baked Ziti and Sausage
Makes 6 servings
3 cups uncooked ziti or other small tube pasta
1/2 lb Italian sausage links
1/4 cup butter, cubed
1/4 cup flour
1 1/2 tsp salt, divided
1/4 tsp, plus 1/8 tsp pepper, divided
2 cups milk
1/2 cup grated Parmesan cheese, divided
1 egg, room temperature, lightly beaten
2 cups cottage cheese
1 Tbsp. minced fresh parsley
1 cup shredded mozzarella cheese
Paprika
Cook pasta according to package directions. Preheat oven to 350 degrees. Drain; place in a large bowl. In a small skillet, cook sausage over medium heat until no longer pink; drain and cut into 1/2 inch slices.
In a large pan, melt butter. Stir in flour, 1 tsp. salt and 1/4 Tsp. pepper until smooth , gradually add milk. Bring to a boil, cook and stir until thickened. Remove from heat and stir in 1/4 cup Parmesan cheese. Pour over pasta, toss to coat.
In a small bowl, combine the egg, cottage cheese, parsley, and remaining Parmesan cheese, salt and pepper. Spoon over half the past mixture in a greased baking dish. Top with cottage cheese mixture. Add sausage to the remaining pasta mixture, spoon over the top. Sprinkle with mozzarella cheese and paprika.
Bake uncovered about 30 to 35 minutes.
This will be very good served with a slice of garlic bread and a veggie salad.

Friday - Spinach and Artichoke Dip Grilled Cheese
Weekend - Slow Cooker Chuck Roast with Potatoes and Carrots
I went out for groceries yesterday afternoon due to the weather advisory for today and I’m glad I did.

I have never had Irish Coffee - I wonder if it taste good?

What a coincidence - Louis Dean's doctor just put him back on blood pressure meds due to his kidneys. He has stage 3 CKD. AND he has now started drinking water like he should be doing! I still don't understand why blood pressure meds affect the kidneys but I'm grateful for having good medical doctors that do!
I've not had an Irish coffee in years, but yes. It sounds wonderful. Especially I enjoyed the backstory.
These weekly menu items sound great. I'm anxious to see what goes into a white chili.
