Today is Chocolate Cake Day which celebrates one of the most popular kinds of cake. Cakes have a rich culinary history. An early form of cake called plakous originated in Greece. These cakes were heavy and flat, and people served them with nuts and honey. The Romans made cakes that were more like a cheesecake or pastry, and these delicacies were often presented as offerings to the gods.
In Medieval England, people used the words bread and cake interchangeably to refer to anything made with flour dough.
A company called O. Duff and Sons created the first boxed cake mix in the late 1920’s. In 1947, after a few years of research and development, General Mills released the first just add water Betty Crocker cake mixes. The available flavors were Ginger Spice, Yellow and White. In 1948, Pillsbury introduced the first chocolate cake mix.
There are many different types of chocolate cake, including Black Forest, Devil’s Food, flourless, Fudge, Gananche, German chocolate, Lava and much more.
To celebrate today head to your local bakery or whip up your favorite recipe. Enjoy!

As I told you yesterday I can no longer have cake so I googled what to have instead. The answer to that is that it is possible for people with diabetes to enjoy desserts. Desserts are best in moderation. People with diabetes do not necessarily need to skip dessert entirely, but they can opt for a smaller portion of dessert.
By baking at home, a person can control exactly what goes into the dessert. They can swap out ingredients such as sugar for artificial sweetener, use whole grain flour, or use applesauce instead of butter to make the dessert fit into their diet plan.
Dark chocolate with no added sugar may benefit people with type 2 diabetes. Chocolate offers health benefits, including helping to control blood sugar levels. You just have to make sure it contains no sugar.
It was suggested that we eat fruits and fruit salads Fruits are high in sugar, but they offer a range of nutrients including vitamins and fiber. They can satisfy your cravings for sweets.

The Ultimate Grilled Cheese
It’s suggested we use less bread by making an open face sandwich.
Usually they suggest whole wheat bread but whole wheat isn’t good for kidneys so I’ve opted to use rye bread instead.
1 oz light cheddar cheese
2 slices bread of your choice
1 1/2 tsp light margarine
2 tablespoons egg substitute
1 Tbsp. skim milk
Place cheese on one slice of bread. Top with remaining slice of bread.
In a shallow bowl, combine egg substitute and milk.
Melt margarine in a large nonstick skillet. Dip sandwiches in egg mixture. Cook sandwiches for 3 minutes on each side or until golden.
I no longer use margarine because I believe natural butter with no salt is better for you, so that is what I use to make mine. I also use 2 percent milk and not skim milk.
I am learning a new way of cooking now so bear with me as I attempt to give you healthier versions of recipes.
It’s another cold day but we’re not to have anything more than a few snow flurries so for that I’m thankful. The pictures today are from DS#5’s birthday a few years ago.

I'm going to miss my desserts like cake, but a taste or two isn't going to hurt.
Funny, I was just thinking of making a crock-pot chocolate cake to bring to our ladies luncheon on Monday. That or a cauliflower dip; I've still got a couple days to decide.
I think your new journey/way of eating will be a benefit to lots of readers who want to enjoy good food without all the guilt.
