Today is Mason Jar Day which commemorates the ingenious invention that has been bringing families together for generations. While some forms of food preservation have existed for centuries it wasn’t until John Landis Mason’s invention and patent was issued, on this day in 1858, that the home canning became a safe reality. The original Mason jars are now valued as collectors items and many still use Mason Jars in their kitchens.
These jars have been used for everything from canning fruits and vegetables and jams and jellies to cute office supply storage. They are great for storing candy, nuts and bolts, and buttons. They are also great for creating fun and easy gift baskets by mixing dry ingredients for for soup, bread, or cookie mixes in cards and attaching a card with preparation directions.

I do like Mason Jars and have several. I have a button jar which is shown in the picture above, and I store nuts and raisins in them too. I’ve received gifts in a jar. The picture below is a cookie mix I received last year for Christmas. I even have Mason Jars that have handles on them and can be used for drinking.
I have candles that are in Mason jars too. I have herbs and spices that are stored in jars too. I could go on and on telling about their many uses.
I found this recipe for making a quick meal in a jar so I thought I’d share it with you today. Mason jar meals are basically the easiest, most portable way to make and take a devious breakfast, lunch or dinner.
Mason Jar Burrito Bowl
2 tbsp. salsa
1 tbsp. red onion diced
1/2 c. cooked quinoa or brown rice
1/2 c. cherry tomatoes halved
1/4 c. bell pepper, diced
1/3 c. cooked black beans
handful of crushed tortilla chips
2 tbsp. cilantro
2 oz. lettuce
Layer all ingredients in a quart size jar starting with the salsa on the bottom and ending with the lettuce and chips on top. If you want your could also add some shredded cooked chicken to make it more substantial. Reseal the jar and refrigerate up to 5 days.
When ready to eat simply shake the jar so salsa is well mixed and either pour in a bowl or enjoy straight from the jar.
