PEPPER POT DAY
Also known as Philadelphia Pepper Pot, the soup is a thick stew of meat, tripe, vegetables, seasonings, and -- first and foremost -- pepper. According to lore, during the grueling winter of 1777 to 1778, George Washington's army was down to only basic supplies and in need of hearty nourishment. The cook pulled together the dish using the scraps of remaining food, tossing in some peppercorns for spice, and named it after his Pennsylvania hometown
PEPPER POT SOUP
Note: while tripe was a main ingredient of this soup, you can substitute with chicken or beef.
1 pound honeycomb tripe
5 slices bacon, diced
1/2 cup peeled, chopped yellow onion
1/2 cup chopped celery
3 leeks cleaned and chopped
1 bunch parsley, chopped
2 green sweet bell peppers, seeded and chopped
2 quarts beef stock, canned or homemade
1 tsp whole thyme leaves, or more to taste
1/2 tsp marjoram
1/2 tsp ground cloves
1/4 tsp crushed red pepper flakes
1 bay leaf
1 tsp freshly ground black pepper
1 large potato, peeled and diced
4 Tbs each butter and flour, cooked together to form a roux
Place the tripe in a saucepan and cover with water. Bring to a boil and turn off the heat. Allow the tripe to cool in the water and then drain and rinse. Cut into 1/4 inch diced pieces
. In a large heavy kettle, saute the bacon. Add the onion, celery, leeks, parsley, and green peppers - saute until tender. Add the remaining ingredients except the potato, flour, and butter. Bring the kettle to a boil and turn down to a simmer. Cook, covered, until the tripe is very tender, about 2 hours. Add the diced potato and cook about 20 minutes. Prepare the roux by stirring the flour into the melted butter and cooking for a moment on the stove. When the soup is done, stir in the roux and simmer, stirring constantly, until the soup slightly thickens.

Every day we do have a choice to make. We'll either have a great day or a bad day depending on what we choose to do. Believe me when I say that time does go by faster as you age. My days have a way of being over before I hardly know they have begun. So what ever I do, I make my choices wisely.
Life is way to short to dwell on anything negative. There is a lot of that around, but it's not for me.
Life is not always fair, but we do have a choice to make something wonderful happen each and every day!

You are so right about how precious time is. Someone said once that a person on his deathbed never wishes he had spent more time at the office. So many other things are just so much more important, not that people don't have to make a living but we need to keep things in perspective and make sure we spend time with the people we love and doing things that mean something and not just vegging out in front of the tv. :o) Great post as always! xoxo
