LOOK FOR AN EVERGREEN DAY
Look for an Evergreen Day is today. To many people, only a fresh cut real tree will do for Christmas. The scent of fresh pine helps to capture the feel of the holidays. Nothing looks more real than a real tree, each one with it's own character and appearance.
There is no shortage of types of Christmas trees. Generally classified as firs, spruces, and pines, the most popular varieties have changed over the years.
If you haven't selected a tree yet, it is certainly getting late. By the 19th of December, most people have found and put up their Christmas tree. So if you are still treeless, this special day could be the day to do so.
NEW IN THE KITCHEN
OATMEAL MUFFIN DAY
It's like a bowl of oatmeal you don't need to eat with a spoon.
OATMEAL DATE MUFFINS
1 c. old fashioned oats, uncooked
1/2 c. chopped pitted dates
1 c. milk
1 1/2 c. all purpose flour
2 tsp. baking powder
1/2 tsp. salt
2 lg. eggs, lightly beaten
2/3 c. firmly packed brown sugar
1/4 c. butter, melted
1/2 tsp. grated orange peel
1/3 c. chopped walnuts
Preheat oven to 400 degrees. Grease 12 muffin pan cups. Combine oats and dates with milk in medium bowl; let stand 10 minutes. Meanwhile, combine flour, baking powder and salt in large bowl. Stir eggs, sugar, butter and orange peel into oat mixture until blended.Stir in dry ingredients just until combined. Stir in nuts. Spoon into prepared muffin cups. Bake 25 minutes or until toothpick inserted in center comes out clean. Remove from pan and cool on wire rack. Makes 1 dozen.

Christmas trees are very special to most of us and I found a couple of stories about them to share with you today.

One story tells that when Christianity first came to Northern Europe, three virtues: Faith, Hope and Charity were sent from Heaven to find a tree that was as high as hope; as great as love; as sweet as charity; and one that had the sign of the cross on every bough. Another tale tells about a woodcutter who helps a small hungry child. The next morning, the child appears to the woodcutter and his wife, and is none other than the Christchild. The child breaks a branch from a fir tree and tells the couple that it will be a tree that, at Christmas time, will bear fruit. As foretold the tree is laden with apples of gold and nuts of silver.

Hi Pam....I am making oatmeal cookies today but oatmeal muffins sound wonderful, too!
