ON THE BRIGHT SIDE

SEPTEMBER 25th, 2010

It's SATURDAY!

It should be a much cooler but sunny day today. Yesterday our temps were in the high 80's and we had a strong southernly breeze blowing at us all day long too.

By evening we got a very short rain fall and then it cleared and we sat at the campfire with stars shining and watched the full moon come up behind the trees.

NEW IN THE KITCHEN

Roasted Red Potatoes with Bacon and Cheese

1/2 cup Ranch Dressing

1/2 cup Shredded Cheddar Cheese

1/4 cup Real Bacon Bits

2 lb. small red potatoes (about 6), quartered

1 Tbsp. chopped fresh parsley

HEAT oven to 350°F.

MIX first 3 ingredients in large bowl. Add potatoes; toss to coat.

SPOON into 13x9-inch baking dish sprayed with cooking spray; cover.

BAKE 55 min. or until potatoes are tender, uncovering after 40 min. Sprinkle with parsley.

I hope to get my crock pot going about noon today for our brats and sauerkraut dinner this evening. The recipe that I have says cook on low for 5-6 hours so we'll see how that goes.

DS#1 and family came in yesterday evening and found that our usual winter time visitors had been in their camper. No sign of them in mine so that's a good thing. They usually don't show up around here till after the campers are closed up for the winter.

All signs are pointing toward a bad winter. The nuts are falling like crazy from the trees and have been for quite a while now. I'd think all the critters will have plenty to store away as the ground is covered with them here.

COUNTING THE DAYS

The only thing that has to be finished by next Tuesday is next Monday
