THINKING
Just for Today
.. smile at a stranger.. listen to someone's heart

.. call someone, for no other reason than to just say "Hi"
.. show kindness to an animal.. stand up for what you believe in
.. smell the rain, feel the breeze, listen to the wind
.. use all your senses to their fullest

Makes 8 to 10 servings
1 pork shoulder, picnic roast (remove fat)
1-1/4 cups ketchup
1/2 cup water
1/2 cup honey, we suggest dark honey
1 cup chopped celery
1 cup chopped onion
2 Tablespoons lemon juice
3 Tablespoons white vinegar
3 Tablespoons Worcestershire sauce
2 Tablespoons dry mustard
1 teaspoon salt
1/2 teaspoon ground black pepper
8 to 10 crusty rolls or flour tortillas
In 9x13-inch pan, combine all ingredients. Cover with foil and roast at 300°F oven for 3 to 3-1/2 hours. Shred meat using two forks, removing all bones and skin. Stir with sauce. Serve in crusty rolls or warmed flour tortillas.

That is so nice that highschool starts after Labor Day where you are. Our kids get out the first week in June and have to go back to school the first week in August. The nation could save thousands on utilites if they would let school start in September and not pay for all that air conditioning for kids to go back early. Families would have more time to be a family too!! Hope you enjoy your time at the camper! That sounds so nice!!! Very refreshing to get away to the woods.
