Here I am at home again. I'll be taking a few days to catch up on things around here and then mid week I'll head to DS#1's because I want to see our Princesses String Concert. After that I'll head to the campground and stay through the Memorial Day Weekend.
I hope the weather clears up for some beautiful days there. DS#1 and family, DS#5 and his wife, DD and her hubby and DS#6 and his family should all be camping with us that weekend.
God did not call me to be successful. He called me to be faithful.

NEW IN THE KITCHEN
Zesty Ham Rollups
8oz. cream cheese, softened
2tbs. Dijon mustard
3 green onions, chopped
6 (8") flour tortillas
12-18 large spinach leaves, stems removed
12oz. whole roasted red bell peppers, drained and patted dry
3/4lb. thinly sliced deli ham
In small bowl, combine cream cheese and mustard. Add onion. Mix well. Spread about 1/4c. cream cheese mixture onto each tortilla to w/i 1/2" of edge. Cover each w/ 2-3 leaves, pressing lightly into cream cheese mixture. Top w/ 1-2 bell peppers and 2 ham slices, keeping layers as flat as possible. Roll up tightly in jellyroll fashion. Wrap each securely in parchment paper or plastic wrap. Refrigerate seam-side down, at least one hour. Remove wrapping. Discard. Cut each roll crosswise into 1" slices. Serve on lettuce-lined platter, if desired. Yield about 48 appetizers

It was good to be in my own bed last night but I sure will miss waking up to our little Lucky guys smiling face. He is just so adorable. Of course I feel all my grand'babes' are adorable it's just that I never got to spend a month with any of them before.
I'll be busy the next few days trying to catch up at home. There is always a lot to do around here and I'm afraid that most of it will be put on hold as camping season is in full fling and this grand'ma' loves to camp for sure.
I talked with DD last evening when I returned home. She was at the campground and there was some good news and some bad news. My camper was still mouse free. Everything was fine inside but oh my outside someone had had a party under my camper. I had a seal tight container of bird food sitting on my deck and it looks like some raccoons opened it up and took out all the bags of food...They truly had a feast as there was a lot of it too.
Now I'll have to go shopping for birdseed. I think I had a good summer's supply in that container. It was a gift from DS#4 . It really didn't go to waste at all as I'm sure those critters really enjoyed the fine treat they had.
We'll just hope they don't come back looking for more. If they do, they won't find anything as from now on it won't be left out on the deck .
