Today is also Chop Suey Day which is a Chinese American dish which some say that Chinese immigrants created the dish after arriving in America, while others insist that the dish is traditionally Chinese. Either way, chop suey is now a staple on many Chinese restaurants menus around the country
Chop suey is a stir fry made with a hodgepodge of ingredients like egg, meat and vegetables. The name chop suey comes from a Cantonese word meaning odds and ends. The dish is traditionally served with rice or noodles to soak up all the delicious flavors.
To celebrate today support your local restaurant and order up some delicious chop suey to enjoy!

THOUGHT FOR TODAY
My oldest son died a few years ago from and inoperable brain tumor. He is very loved and missed by all that knew him. My firstborn was named Matthew which means God’s gift. We were married almost 7 years before I had him. We were about to give up thinking we’d have any children at all, but after I had him five more sons and a daughter came along. No one was surprised as I was, and I’m very thankful for all of them.
He was involved in Scouts until he died, he helped fix spaghetti dinners for the scouts as a money raiser for their troop. He was my only son to become an Eagle Scout and was proud of the fact. It helped him when he got the jobs he had. As they knew scouts are loyal and true.
He left behind a wife and 3 children. DDIL#1 does just fine without him as she is a very organized person and handles the money left to them just fine. My son didn’t leave his family penniless, he provided for them very well. He knew what it was like after his own father died and we had much of nothing but love to hold us together. He also knew that his youngest daughter, who is severely handicapped by eplepsy, would forever need care.
I was raised by a mother who served La Choy Chop Suey to us. I also fixed it for my own family. They loved the rice with cinnamon best. They also liked the crunchy noodles I served with the Chop Suey.
The only chop suey I’ve ever had comes in a can from the store. I love the crunchy noodles you buy to go with it! They are good just to snack on, but I don’t have it often anymore because it contains a lot of salt. I do have some in my pantry so today may just be the one I indulge. I do make rice to have with it but put butter and cinnamon on it. I eat the chop suey with the crunchy noodles from a can.
But meanwhile I do have left over chicken salad which would be much healthier for me. Maybe it’s time I learned to make chop suey from scratch so I could leave out the salt. I looked for and found a recipe to share.
Weeknight Chicken Chop Suey
Makes 6 servings
4 tsp olive oil
1 lb. boneless skin chicken breasts, cut up into 1 inch cubs.
1/2 dried tarragon
1/2 tsp dried basil
1/2 tsp dried marjoram
1/2 tsp grated lemon zest
1 1/2 cups chopped carrots
1 can, 8 oz, sliced water chestnuts, drained
1 tart apple, chopped
1 cup unsweetened pineapple tidbits, plus 3 Tbsp. pineapple juice.
1 cup cold water divided
3 Tbsp. teriyaki sauce
2 Tbsp. Cornstarch
3 hot cooked brown rice
This recipe sounds good but I think I’ll finish up eating my chicken salad today.
In a large cast iron or heavy skillet, heat oil over medium heat. Add chicken, herbs and lemon zest; saute until lightly browned. Add next 5 ingredients. Stir in pineapple tidbits and juice, 3/4 cups water and teriyaki sauce; bring to a boil. Reduce heat; simmer, covered until chick is no longer pink and the carrots are tender.
Combine cornstarch and remming 1/4 cup water, gradually stir into chicken mixture. Bring to a boil; cook and stir until thickened. Serve with rice.
I also have some crunchy noodles to have so I’ll have my rice with butter and cinnamon.
I will not be fixing this but eating the leftover chicken salad . I’ll have it on a sandwich today with leaves of spinach resembling lettuce.
