HAPPY ST. PATRICK’S DAY!
If it is Saint Patrick’s Day, then it also must certainly be National Corned Beef and Cabbage day. This is not coincidence.
Corned Beef and Cabbage is as American as Apple Pie. The traditional recipe in Ireland was salt pork or a bacon joint with cabbage. But in the mid 1800’s, Irish immigrants to American discovered corned beef, popular with their Jewish neighbors, which was similar in taste but cheaper. So the American version of this easy to make Irish dish, became Corned Beef and Cabbage.
It is called an Irish dish because it was created by Irish people. They just happened to be immigrants to the U.S. The basic ingredients are corned beef, cabbage, potatoes and carrots, slowly stewed in water.

This whole weekend seems to be about good food here at my house. My favorite thing to have for St. Patrick’s day is a Rubin Sandwich. It is made with corned beef, sauerkraut, and swiss cheese. You see by the picture above, I have all the ingredients. I use canned corned beef because there is just me and I don’t need a lot. It’s good and I’ve used it many times. I’ll also be making my cabbage, potato, carrots and sausage meal tomorrow. It’s easy when done in the crock pot. To top things off I’ll have green jello with pineapple in it for dessert. It’s fun to make a meal with all things green and the carrots are there to remind us of the coins that leprechauns leave for good luck.
Our weather is to warm up a bit to the 40’s today so it should be a great day for those that might be attending a St. Patrick’s Day parade. It won’t be me, as I’m still staying in as much as possible and trying to shake off this cough I’ve had as a remnant from the flu. Easter is just around the corner now and I want to be healthy so I can enjoy all the festivities.
Tomorrow they say we’ll have lots of sunshine and may see some 50 degree temps. More sunshine is definitely needed! It’s only going to last a day and then we’ll go back to normal.
FYI: I do have a wee bit of the Irish somewhere in my very varied ancestry!

I love, love Reuben Sandwiches, especially with that kind of bread in your picture. I usually buy just a bit of corned beef at the deli, and for me the sauerkraut is what goes to waste, wish they made tiny cans. The little guys are so cute, especially the one with the rock. And finally, I too am going to get out in the yard a little and get some sunshine.
