Life is a Special Occasion!
Today is Paul Bunyan Day which celebrates the gigantic lumberjack of American Folklore. Paul Bunyan and his blue ox Babe lived and traveled around the country and is best known for his logging feats.
According to the stories Bunyan was a huge man with an amazing amount of physical strength. He single handedly found the logging industry, he created Lake Superior with his bare hands and even trained carpenter ants to help him with his tasks.
Today Paul Bunyan is mentioned in more than 1000 books and has become one of the most widespread icons in American culture.
A good way to celebrate today is by eating pancakes. Bunyan was supposed to have eaten 50 pancakes in one minute.

The best of old stories spoke to the listener because they spoke not just to the ears but to the heart as well.
I grew up with tall tales such as those of Paul Bunyan. Although he wasn’t a real person it’s good to learn about the brave men and women that did do a lot to create our great country.
Well I’m all about celebrating with pancakes today. It’s been awhile since I made any and they always hit the spot. I even have some maple syrup to have with them. I always make a big batch when I do make them and then freeze the rest. They heat up well in the microwave oven and will make for a quick breakfast later on too.
I did see a recipe for Paul Bunyan cookies which are supposed to be a healthy alternative for breakfast food.
Paul Bunyan Breakfast Cookies
1 1/4 c. flour
1 tsp cinnamon
3/4 tsp. baking soda
1/2 tsp baking powder
1/2 tsp. salt
1/2 tsp ginger
1/2 c. shortening
1/2 c. sugar
1/2 c. molasses
2 large eggs, lightly beaten
1 pkg. semi sweet chocolate chips
1 1/2 c. old fashion oats
1 c. walnuts chopped
1 c. raisins
Preheat oven to 350 degrees. Sift flour, cinnamon, baking soda and baking power, salt and ginger together.
Cream shortening and sugar until light and fluffy. Add molasses and beat to combine. Add eggs one at a time and mix. Add the floor mixture one cup at at time and stir using a wooden spoon. Stir in chocolate chips, oats, walnuts and raisins.
Using a 2 inch ice cream scoop, drop dough onto a greased baking sheet. Bake about 15 minutes until golden brown. Cool on pan for 5 minutes then remove to cool completely on a wire rack.
These are definitely on my to bake list when the weather is cool enough to turn the oven on. That will not be today as I hope to get the yard work done.

Oh, but it is true. Things need not have happened to be true. Tales and dreams are the shadow truths that will endure when mere facts are dust and ashes and forgot.
