Life is a Special Occasion!
It's National Pink Day, a day where everything should be basking in pink splendor! Show that you are tickled pink with this holiday by wearing pink today. The color pink has been associated with breast cancer awareness as well. This day is set aside for the color pink and all it represents.
Pink is the color of watermelon, pink flamingos, Pink Floyd, Pink panther, pink elephant, and Pink roses which signify happiness, admiration, and being thankful. Bright pinks, like the color red, stimulate energy and can increase the blood pressure, respiration, heartbeat, and pulse rate. They also encourage action and confidence.
Wear pink, and show off everything you have that's pink, from clothing and shoes to other possessions. Be creative. Use food coloring to make pink meals. Pink frosting on a cake or cookies will be a big hit today.
If you can't see the Bright Side, polish the dull side
THOUGHT FOR TODAY
I believe in pink. I believe that laughing is the best calorie burner. I believe in kissing, kissing a lot. I believe in being strong when everything seems to be going wrong. I believe that happy girls are the prettiest girls. I believe that tomorrow is another day and I believe in miracles.
I don’t have a whole lot of pink here at my house, but that’s not to say I won’t be wearing pink today and celebrating. The sale of the old house is definitely now a done deal and what a relief it is! I hope to have a party sometime soon as a thank you for all my helpers.
We only got a few sprinkles yesterday but they say more rain coming our way today. It really turned a lot more humid yesterday and it felt quite tropical here. The rain certainly isn’t going get me down at all today cause I’m making my own sunshine here for sure.
The pictures are of what few pink things I could find around the house. Not much, as I said. It’s mostly beige and blue here. But I’m in the pink today!

It’s National Pecan Sandy Day. Pecan sandies are the ideal snack if you like pecans and shortbread. It’s one of my favorite combinations and a great cookie for sure.
1/3 cup finely chopped pecans
1 cup butter softened
1/2 cup sugar
2 1/2 cups flour
1 teaspoon vanilla
Toast pecans in an ungreased heavy skillet. Cook over medium heat 5 to 7 minutes, stirring frequently until nuts and light brown. Remove from heat and cool.
In large bowl, beat butter and sugar with mixer on medium speed until fluffy. Gradually add flour, beating until blended. Stir in toasted pecans and vanilla.
Divide dough in half: shape each portion into 2 logs about 12 inches long. Wrap in cooking parchment paper; refrigerate 1 hour.
Heat oven to 325 degrees. Line cookie sheets with parchment paper. Unwrap dough and cut into 1/4 inch slices. Place slices 1/2 inch apart on cookie sheets. Bake 18 to 20 minutes or until light golden brown. Cool 5 minutes. Remove from cookie sheets and cool.
