THOUGHT FOR TODAY
Rejoice with your family in the beautiful land of life!
This wonderful grandson’s birthday is another long distance celebration. As usual the card went went off in the mail to him filled with birthday wishes for a very happy day!
As you can see this grandson is very much into hockey. I’ve only ever gotten to see just a very few of his games, but it’s amazing to see the way he skates. It’s very different from figure skating but still graceful the way he slides across the ice.
Today is also International Tug of War Day. One of the simplest of sports, dating back to ownership disputes over food and clothing, the history disappears into legend with the Sun and Moon wrestling over light and darkness.
On Tug of War Day, cries of ‘heave’ are heard around the world on a day when numerous matches take place, giving a chance to take part or cheer on this timeless team game.
I’m off to different grandson’s birthday party today and the weather is looking fantastic.
I hope you all have a RELAXING Sunday!
WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
Today is Chocolate Mint Day which celebrates anything and everything that is chocolate mint flavored. The most common chocolate mint treats are ice cream, candies, and desserts.
Chocolate Mint Fudge Bars
2 sticks butter, softened
1/2 cup brown sugar, packed
2 cups flour
1/2 tsp salt
1 cup bittersweet chocolate chips
1 14 oz can sweetened condensed milk
1 1/2 cups Andes Creme de Menthe Chocolate Mint Baking Chips
1 cup semisweet chocolate chips
1 cup mint M&Ms
Preheat oven to 350 degrees. Lightly grease 9 by 13 baking dish or line with parchment paper.
Cream butter and sugar together. Beat in flour and salt until nice and crumbly.
Reserve 3/4 cups of the crumb mixture and press the remaining onto bottom of prepared baking dish. Bake for 10 to 12 minutes or until golden brown.
Meanwhile, combine sweetened condensed milk and bittersweet chips in a microwave safe dish and heat on medium heat, in 30 second intervals in microwave until chips are melted. Stir until smooth. Pour over hot crust and spread until even.
Sprinkle Andes chips on top of the chocolate layer. Sprinkle reserved crumb mixture over chocolate mixture. Sprinkle with 1 cup semisweet chocolate chips and mint M&Ms.
Bake for an additional 25 to 30 minutes or until set. Cool and cut into bars.
