Today is Clean Off Your Desk Day which heralds the beginning of some serious spring cleaning. It’s the perfect day to take the opportunity to do a little tidying!

Organizing is what you do before you do something, so that when you do it, it's not all mixed up.
I’m happy to report that I have cleaned off my desk. Matter of fact, everything that was on my desk is now in two storage bins and the desk itself is gone. I had an old computer desk that used to sit in the dining room and all it did was accumulate stuff. I really didn’t use it much at all anymore, so it will not be missed.
I do have another desk that was a gift to me for my 9th birthday that is currently sitting empty in the attic. I guess you could say it’s an antique. When I get done sorting out the craft room, I plan to bring it downstairs and will keep it when I move too. Meanwhile all my desk stuff is sitting in a couple of bins.
I am hoping to get an early start on Spring Cleaning here. Once all the sorting and packing is done, everything will get a good cleaning. Windows, curtains and wood work here need it. I never did get to it last Spring or fall either for that matter.
I had a restful Sunday and hope you all did too. This week will be another very busy one here for me and it was a blessing to have a day of rest.

Today is Apricot Day!
Apricots ripen in the early summer, but they’re quite commonly dried so that way we can enjoy them year round. Apricots are a wonderful way to protect your heart from a wide variety of diseases, including atherosclerosis, heart attacks, and strokes. The high amount of vitamin C, as well as potassium and dietary fiber, all contribute to good cardiovascular health.
Apricot Slow Cooker Chicken
1 teaspoon extra virgin olive oil
2 lbs. boneless, skinless chicken thighs
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup chicken broth
Zest and juice of 1 lemon
3 tablespoons Dijon mustard
4 garlic cloves, minced
1 teaspoon dried thyme
1 cup sliced onion
1 cup dried apricots, halved if desired
Heat olive oil over medium high heat in a large sauté pan. Season chicken thighs with salt and pepper. Add to pan and cook for 5 to 6 minutes, until browned, turning once.
Combine chicken broth, lemon zest and juice, mustard, garlic and thyme in slow cooker and whisk to combine. Add onions, apricots and seared chicken thighs to the slow cooker. Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours.
Serve chicken thighs and plenty of sauce over brown rice.
