Life is a Special Occasion!
Today is World Soil Day which celebrates the importance of soil as a critical component of the natural system and as a vital contributor to human well being. Soil is, without a doubt, one of the most significant parts of the ecosystem, contributing to our food, water and energy and playing an important part in reducing the impact of climate change. It’s time the world became concerned about the welfare of our planet.

THOUGHT FOR TODAY
Time, the years, the seasons, the dreaming and the hopes which throb with life even under the ice and snow. There is an order to all things, a pressure of progression, and the winds themselves will die into nothingness and the tides wither away before the hopes shall have ended, the aspirations frozen forever. Year builds upon year, even as the seasons follow. And year's end is no end at all, but only a pause, a time for the deep breath that marks the next step forward. There is no halt, no turning back. Tomorrow rises in the east, and all tomorrows.
While our soil is not quite frozen through yet, it will be soon. The temps are steadily dropping here. We are starting off the week with temps in the forty’s but by the end of the week the long range forecast says we’ll drop down into the upper 20’s. The land takes a rest here in northern Ohio.
This week I’m trying to continue with the sorting out, but there are things I must do for Christmas too. I got my cards started over the weekend, but I still need to get stamps so that I can mail them out. I’d really like to do a little shopping too. I’m not buying much but there are a few traditional things that I always get for my family. There are just some habits that are hard to break.
It’s very hard to believe that there is just a little over two weeks until Christmas. The pictures today are of a Breakfast with Santa that I went to with DS#5 and his family yesterday after church.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s National Comfort Food Day.
To me comfort food includes things like mac and cheese, spaghetti, grill cheese sandwiches, and there’s nothing quite like chicken noodle soup when you aren’t feeling good. So I thought I’d share a recipe for something new today.
Cheddar Mashed Potato Casserole
2 lb. Yukon gold potatoes, about 6, peeled, quartered
2 Tbsp. butter
1/2 cup Sour Cream
1 cup Shredded Sharp Cheddar Cheese
6 slices Bacon, cooked, crumbled
Cook potatoes in boiling water in large saucepan 20 min. or until tender; drain. Return to pan.
Heat oven to 350ºF. Add butter and sour cream to potatoes; mash until smooth. Spoon half into 1 1/2qt. casserole sprayed with cooking spray; cover with layers of cheese, remaining potato mixture and bacon.
Bake 30 to 35 min. or until heated through.
Makes 10 1/2 cup servings
