Life is a Special Occasion!
Bakers of the world, rise up and bake some bread, for today is Homemade Bread Day. Bread has been made for thousands of years. Modern day lifestyles has relegated homemade bread to the world of specialty baking and holiday baking. People just don't have time to bake home made bread.
The purpose of this day is easy to understand. Just make some home made bread. So, take a little time out of your busy day, and make some bread. Your nose, your taste buds, and your whole family will be glad you did.

THOUGHT FOR TODAY
The best smell is bread; the best saver, salt; the best love, that of children.
My favorite bread to make is Banana Bread. I make it often as I seem to always have some leftover ripe bananas here at my house. I’ve probably shared this recipe before but am doing so again today.
Chocolate Chip Banana Bread
1/4 cup vegetable oil
1 1/2 cups flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs, lightly beaten
3 bananas, mashed
1 cup chocolate chips, I use less
Makes 1 loaf
Pre-heat the oven to 350°F . Grease and flour a 8 1/2-inch x 4 1/2-inch loaf pan
In a large bowl, whisk together the flour, sugar, baking soda and salt. Mix in the oil, bananas and eggs. Stir in the chocolate chips and pour into the prepared pan. Bake until a toothpick inserted in the center comes out clean, about 60-80 minutes. Cool the loaf in the pan for 10 minutes, then turn out and cool completely, right side up.
I do have a bread machine that my children gave to me for a gift a few years back and I’ve not used it for a good long while. With the colder days upon us and with more time to spend indoors I fully hope to use it more this year. We’ll see…

37 DAYS UNTIL CHRISTMAS
In the weeks to come, the refrigerator will play a starring role in the holiday kitchen, so clear the decks for holiday cooking with a refrigerator clean out. It’s easy to let things accumulate in the back of the shelves of my refrigerator. So I know this is one job I need to do in order to make more room.
COUNTING MY GIFTS
Looking for and enjoying beauty is a way to nourish the soul. the universe is in the habit of making beauty. There are flowers and songs, snowflakes and smiles, acts of great courage, laughter between friends, a job well done, the smell of fresh baked bread. Beauty is everywhere.
I have counted at least 3 things every day that I'm thankful for 2 years and have now reached over 2000 gifts. On my way now to 3000. I'm not stopping, but will continue on counting. There is always, always something to be thankful for.
