Random Acts of Kindness week is celebrated February 14th through the 20th. People like the idea of showing a little kindness to others. Its a fun and good thing to do. It makes both the giver and the receiver feel good.
Caution: What comes around, goes around. Random Acts of Kindness is highly contagious.
1/3 cup molasses
1/4 cup firmly packed brown sugar
2 tablespoons butter or margarine
3/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon baking soda
1/8 teaspoon salt
whipping cream to serve
Scald milk in large pan over medium heat. Reduce heat to low and slowly whisk in cornmeal. Whisking frequently, cook about 5 minutes or until mixture thickens. Remove form heat.
In small bowl, beat eggs. Slowly whisk 1 cup cornmeal mixture into beaten eggs; gradually stir egg mixture back into hot cornmeal in pan. Add molasses, brown sugar, butter, cinnamon, ginger, baking soda, and salt; stir until well blended.
Pour into a greased 2 quart baking dish. Bake 1 to 1 1/4 hours or until sides are set but center is still soft. Serve warm with whipping cream.
