ON THE BRIGHT SIDE

OH my we are having some wonderful weather. The days have just been so warm and sunny ever since Sunday. All I can say is Thank You Lord! I sure did need some sunshine and warmth.
I did put my ceiling fans to work in the house yesterday but there was no need for any air conditioning yet. I don't like to turn it on unless it's absolutely necessary.
I hope your Tuesday is a terrific one!
God's extraordinary goodness comes to us in ordinary days.
Often we look for God in the spectacular, only to discover that He was with us in the ordinary days all the time. God has everything we need.
The LORD says, You will seek me and find me when you seek me with all your heart
NEW IN THE KITCHEN
QUICK & DELICIOUS CHICKEN
1 1/2 lbs. boneless chicken breasts
1 cup breadcrumbs
1/2 cup sliced almonds
1 teaspoon garlic powder
1/2 teaspoon basil
1 large egg - beaten
1/4 teaspoon pepper
1/4 cup honey
2 tablespoons soy sauce
2 tablespoons Dijon mustard
Preheat oven to 425°F. Pound Chicken thin or cut chicken on the diagonal if fat. Cut chicken into strips. Place breadcrumbs, almonds, garlic powder, basil, salt and pepper in a food processor; pulse until the almonds are chopped.
Place crumb mixture in a shallow dish that is easy to dip chicken. Place beaten egg in a shallow dish. Dip chicken into egg mixture until evenly coated. Dip in bread crumb mixture until well coated.
Spray a cookie sheet with cooking spray and bake for 20 minutes.
Mix honey, soy sauce and mustard in a small bowl. Serve chicken with the honey-mustard sauce.
Lord Jesus, you promised to be with your people always, and so we know that you are with us in good times and bad. Nothing that ever happens to us can separate us from your love. Help us always to be positive in our attitude that we may seek and find the best in people and in situations, and so draw good out of all that happens to us

Spring is nature's way of saying, Let's party!
My new favorite place to shop in my hometown is BIG LOTS. I'm saying this because they had some $1 dollar books that I was able to purchase so now I have a pretty good selection of reading for the days ahead. Some of the authors I'd never heard of but I'll find out soon if they are any good or not. I've also found a few good books at the General Dollar store to read too. The prices they charge are in my budget so that's a good thing.
Preparations are being made for Memorial Day Camping. The menu is set and the boys are talking about whether or not they will golf or canoe or both. Some are making a trip to the Cheese factory to get some of that good Amish cheese. I'll just be happy to sit back and relax and spend some time with family and of course I might be tempted to eat some of that cheese too.
The weatherman says that now it will cool down for the weekend. After being close to 80 degrees for a few days we'll be going back in to the 60's and low 70's for Saturday, Sunday and maybe Monday too. The good news is that it isn't supposed to rain anyway.
